11 Days Til Halloween

Today we decided to make cupcakes.

We started out with a Pillsbury box cake mix, Pillsbury Halloween Funfetti orange frosting, and some cute paper liners. Since my 9 year old son was helping make these I had all the wet ingredients in their seperate bowls on the table as well so he could do it all himself.

We get the wet ingredients mixed in with the dry. This is the first time he has used an electric mixer. Well.....this is where things went bad. Had it all mixed up and it was just sticky and clumping up all on the handles! You HAVE to add the water!! You CANNOT add the water as an afterthought when everything is already mixed up.

We then had to look up a recipe to bake from scratch. I have decided I like this much better! It was so much easier than I had thought! We added Halloween colored sprinkles to make it funfetti.

So after getting it all mixed up (again), we are ready to put batter in the liners.

And goes from sitting at one side of the table to standing on the other.....

The end result was yummy....I managed to snag one on the way out the door for work....but I have no end pictures as he was frosting while I had to get ready for work.

Here is the recipe that we used:

2 c. flour
1 tbsp. baking powder
1 tsp. salt
1/2 c. butter, softened
1 1/4 c. sugar
2 eggs
3/4 c. fluid milk
1 tsp. vanilla
Beat together butter and sugar until light and fluffy.   Sift together the flour, baking powder and salt. Set aside.   To mix the cake add the flour mixture slowly to butter mixture in a large bowl, beating well (300 times).   Add half of the flour mixture, then half of the milk and the vanilla. Mix (50 times). Add the eggs, beating well after each addition.   Add the remaining flour mixture, then the rest of the milk. Mix until smooth (200 times). Fill a greased, floured baking pan or 2 layer pans no than half full.   Bake at 375 degrees (moderate oven) 25 to 35 minutes until cake springs back when lightly touched near center.
